Bagels or Cinnamon Rolls at Home

Want to enjoy bagels or cinnamon rolls made fresh in your home?

It all starts with poolish...

I've talked about my awakening to the use of poolish here before.  Inspired by Peter Reinhart's teachings about slow fermentation in The Bread Bakers Apprentice  I focused on poolish as the most flexible first step.  Poolish is very wet and that means nothing you make with it will ever be wetter.  Because you always have to add flour to it to finish your project it is the most flexible preferment that you can use.  Each recipe starts with a 750 gram batch of poolish - the recipe is on the video.  Because each recipe in this series starts with this same first step you can have the poolish available and make bagels or cinnamon rolls as the spirit moves you.  To date there are two recipes with two more to be released this year.  So get started with Bagels and Cinnamon Rolls and you'll be ready when we release Focaccia and Pizza followed by Ciabatta and english muffins

BAGELS the way they were meant to be...

If you don't have a bagel shop near you that knows that a real bagel has to be boiled (not steamed) before it's baked then you are really missing something special.I only know two ways to get good bagels. The first is to visit a bagel bakerywhere quality, care and know how abound. If you can't do that then you'll have to make them yourself. You can with a little assistance from Bagels at Home and a small amount of specialty equipment and ingredients. Even without the specialty ingredients you can make a start and have your first batch of Bagels the weekend after you receive the video.

Cinnamon rolls like you've never had before...

Just wait till you take your first cinnamon rolls out of the oven.  The fragrence will bring folks to the kitchen no matter how early it is on a weekend morning - I know this from personal experience.  The recipe produces 18 regular size or 12 mega sized crowd pleasers.  You use your own judgement here.  The larger rolls almost require you to consume two cups of coffee or a very large glass of milk!
