I have been baking your bagels on an Exopat Silicone baking mat placed upon a aluminum cookie sheet since I purchased your two DVD's with very good results. I finally located a source of flat parchment paper (Exopap, coated with silicone) and this morning used that directly on the stone. With these silicone coated materials, no spray or cornmeal were needed. My bagels went from very good to awesome! Being that I am at 1600 ft. altitude and my oven is not the convection type (as yours appears to be in the video) I am using a little higher temperature (450F) and a little longer time to achieve browning. I look forward to purchasing your future videos (without plastic wrap and pizza cutter combinations, please);-)
