I remember watching in facination over 15 years ago in a mall somewhere in California as a worker at a cinnamon pastry shop rolled out soft and yeasty dough, spread on a moist looking mixture, rolled it up like a jelly roll and brought out a yard stick to precisely cut the fat snake of dough into neat spirals.
