Bread doesn't have to conform to a classic appearance to be yummy, and they look yummy. If these were boiled bfore they were baked they held up very well. " Never apologize for the bread" said Peter Reinhart at a workshop I attended. That is something I often remember when the bread doesn't meet my standard, but is delicious just the same.

Thanks for your kind words! They tasted fine, but I did fall asleep at the helm and they overrose--I was so excited about making them I woke up at 3:30 am, put them on the counter at 4:30 am, went back to bed and two hours later ....
